We did it. Our sausage making day was a success. That might be jumping the gun a little because they are still hanging to dry so we haven’t actually gotten to taste them yet. But they look good!
First you have to mix the beef and pork together along with all the seasonings.
Wine goes into the meat for flavor and to get the needed wet consistency.
We ran out of wine. Gee… I wonder why!!!
Now it’s time to stuff the hog casings. First a demo by Ron then Kevin took over.
After the links are made they need to be tied off. Linda is a master at this… it took Joyce and I a bit to catch on.
It’s never too early to introduce the next generation to this family tradition.
